Blue Ginger Café

Description by Jackson Jones
I love going to Blue Ginger.  They have the best fried chicken.  I eat fried chicken every time I go there.  It is golden.  I also like the Peace Tea I get there, it is raspberry and sweet.  I don’t like that they don’t take credit cards.  My parents usually use their cards.  This means I can’t go as often.  I can’t live without Blue Ginger.

History by Seth Willett
Blue Ginger was built in 1925.  It was a tailor and laundry shop.  It later was used by the pineapple plantation for experiments.  In 1982 it became a pastry shop. In 1991, the Abilay family opened the Blue Ginger Restaurant.  Today, it serves a lot of food.

Interview with Dottie Tan by Jackson Jones
Dottie Tan owned Dahang’s Pastry Shop for 9 years.  Dahang’s Pastry Shop opened in 1982.  Dottie’s mom was the baker.  She sold the building to the Abilais, who renamed it the “Blue Ginger Cafe”

When Dottie arrived at the building there was no equipment.  It had been used for experiments for the pineapple plantation.  Then it was vacant for a year.  There was only one small sink when she got there.  She put in the whole kitchen, including a whole sink, big mixer, and frier.

The bread recipe that Dottie Tan used when she owned Dahang’s is the same recipe they use today.

I am glad I got to interview Dottie Tan.  I don’t think anyone knew more about the Blue Ginger building than her.

Description by Seth Willett
I love Blue Ginger.  It is a big, blue, restaurant.  I love to go there with my Nana.  I like the brownies they serve.  They have frosting and are big.  I also love to get cookies there.  The chocolate chip are my favorite.  Blue Ginger is the best restaurant.
